Banana Apple Buckwheat Muffins

I grew up with the saying, “An apple a day keeps the doctor away.” Let’s start our day with these delicious and nutritious Apple Buckwheat Pancakes – what a great way to start your day before you begin your adventure!

  • ½ cup buckwheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon coarse salt
  • 4 large eggs
  • 1 ripe banana mashed
  • ½ cup honey
  • 1 ½ cups finely chopped (peeled and cored) sweet apple, such as Honeycrisp
  • ½ cup chopped walnuts


  1. Preheat oven to 350F. Line a standard muffin tin with paper liners.
  2. Whisk together flour, baking powder, cinnamon and salt.
  3. In another bowl, whisk together eggs, banana and honey.
  4. Mix the banana mixture into the flour mixture, then fold in apples and walnuts (the batter will be thin).
  5. Divide batter among lined cups, filling to the top. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Transfer muffins to a wire rack to cool.
  6. Store in an airtight container at room temperature for up to 2 days.
